Pontormo Dressing

This dressing can be used for any salad.

1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 tablespoon red wine
¾ teaspoon salt
½ teaspoon fresh ground black pepper
¼ cup extra-virgin olive oil

In a small bowl, whisk together the vinegars and the wine. Whisk in the salt and pepper, then the olive oil.

*Pancetta – “Little belly” – is the literal translation, and you’ll get one if you eat too much of this unsmoked bacon (sometimes called pork belly in America). Pancetta is delicious cut thin onto crusty bread and topped with wafer-thin red onion slices, ground pepper, and olive oil. Or, for a treat, you can cook it like bacon. Pancetta gives depth to spaghetti alla carbonara and many soups and sauces. If you can’t find pancetta, use unsmoked bacon, or blanche and drain smoked bacon.
