Crostini al Pomodoro con Erbe Aromatiche (Tomato Toasts with Aromatic Herbs)

CROSTINI AL POMODORO CON ERBE AROMATICHE
Tomato Toasts with Aromatic Herbs
Serves 4 – 8

Ingredients:
2 large ripe tomatoes
2 tablespoons finely chopped scallions
¼ teaspoon finely chopped garlic
1 teaspoon freshly grated ginger
2 teaspoons each finely chopped fresh basil, marjoram, dill, and chervil
2 teaspoons finely chopped fresh chives
2 teaspoons red wine vinegar
½ cup extra-virgin olive oil
1 teaspoon salt
5 slices Tuscan bread, toasted

Procedure:

Peel, seed, and dice the tomatoes, placing them in a colander and letting them drain for 30 minutes. Mix in the scallions, garlic, ginger, herbs, and chives and combine well. Add the vinegar, olive oil, and salt and let the mixture rest for an hour at room temperature. Spoon the mixture onto the toasted bread and serve.
