Seven-Bean Salad
(Serves 8-10)

7 cups cooked beans (assorted types)
¾ cup thinly sliced red onion
1 cup red wine vinegar
¾ cup diced celery
¾ cup chopped fresh Italian parsley
¾ chopped fresh basil leaves
1 cup extra virgin olive oil
1 teaspoon freshly ground black pepper
⅓ teaspoon crushed red pepper
1 cup seeded and diced ripe tomatoes

1. Soak the sliced onions in the vinegar for at least 30 minutes. Drain, discarding vinegar.
2. In a large bowl combine all of the beans with the celery, parsley, basil, red onion, olive oil, black pepper, crushed red pepper, and salt to taste.
3. Toss well, fold in the tomatoes, and serve. (If you refrigerate the salad, before serving, warm it for a minute or two in a skillet to bring out the flavors.)
